Method
Rice & Base
Rinse 2 cups short-grain rice under cold water until the rinse runs clear (3–4 times). Drain thoroughly.
Combine rinsed rice and 2.2 cups water in a rice cooker or a medium pot. Let stand 10 minutes, then cook according to your rice cooker, or bring to a boil on medium-high, reduce to low, cover and simmer 12–14 minutes until water is absorbed.
Once cooked, remove lid and let stand 10 minutes. Fluff with a rice paddle or fork, fold in 1 tsp sesame oil, 1 tps (1 tbs?) toasted sesame seeds and 1 tsp salt to taste. Keep covered and warm.
Protein & Marinade (Beef Bulgogi-style)
Prep the beef: if not pre-sliced, freeze the beef for 15–20 minutes to firm, then slice very thin (against the grain). Place in a wide bowl.
Make the marinade: whisk together 3 tbs soy sauce, 1.5 tbs brown sugar, 1 tbs mirin, 1/4 cup grated Asian pear or apple, 2 tsp minced garlic, 1 tsp grated ginger, 1 tsp sesame oil and 1/2 tsp coarse black pepper until sugar dissolves.
Pour marinade over beef, mix thoroughly to coat, cover and marinate at room temperature 20–30 minutes (or refrigerate up to 2 hours for deeper flavor).
Heat 1 tbs vegetable oil in a large skillet or cast-iron pan over medium-high heat until shimmering. Add marinated beef in a single layer (work in batches if needed) and sear 1–2 minutes per side until caramelized and cooked through. Toss in 2 tbs sliced green onions at the end and remove from pan. Keep warm.
Vegetables & Pickles
Blanch and season spinach: bring a pot of salted water to a boil (use 1/4 tsp salt). Add spinach and blanch 20–30 seconds until bright green. Drain, rinse under cold water, squeeze out excess moisture, and toss with 1/2 tbs soy sauce, 1/2 tsp minced garlic and 1/2 tsp toasted sesame oil. Set aside.
Prepare raw vegetables: julienne 1/2 cup carrots and thinly slice 1/2 cup cucumber. If you prefer, toss cucumber with 1/4 tsp rice vinegar and a pinch of salt and let sit 5 minutes to remove excess water.
If using quick-pickled daikon or kimchi, drain slightly and portion into serving amounts.
Gochujang Sauce & Garnish
Make the sauce: combine 2 tbs gochujang, 1 tbs mayonnaise (optional), 1/2 tsp rice vinegar and 1/2 tsp honey or sugar. Adjust sweetness or heat to taste. Thin with 1–2 tsp water if desired for drizzling consistency.
Toast and shred nori (or use pre-toasted): crumble 1 sheet into flakes. Prepare extra toasted sesame seeds and scallion rings for garnish.

Assemble the Dosiraks
Portion Rice
Divide the seasoned rice into 3–4 bento-style containers or bowls (serves 3–4). Smooth the top slightly to create space for toppings.
Arrange Components
Place a portion of cooked bulgogi-style beef in one corner, blanched seasoned spinach in another, carrots and cucumber in separate sections, and a portion of quick-pickled daikon or kimchi if using. Make sure each ingredient occupies its own compartment or area to keep textures distinct.
Garnish & Finish
Sprinkle shredded nori, kim flakes, extra toasted sesame seeds and scallion rings over the rice and toppings. Close containers for transport or serve immediately. Provide extra gochujang sauce on the side if desired.
Storage: refrigerate for up to 2 days. Reheat uncovered in a microwave until warmed through; add fresh nori and sesame seeds after reheating to retain texture.
