Poach the chicken

Place the chicken thighs in a medium saucepan and cover with 2 cups of water or just enough to submerge. Add 1/2 tsp salt and bring to a gentle simmer over medium heat. Reduce heat and poach until cooked through (internal temperature 165°F / 74°C), about 12–15 minutes depending on thickness. Remove chicken to a plate and reserve 1 cup of the poaching liquid. When cool enough to handle, shred the chicken with two forks into bite-sized strands.

Sear and build flavor

In a heavy skillet or Dutch oven, heat 2 tbsp olive oil over medium-high heat until shimmering. Add the sliced yellow onion (from the chicken ingredients) and sauté until softened and beginning to caramelize, about 6–8 minutes. Add the 3 cloves of garlic (minced) and cook 30–45 seconds until fragrant. Season with 1 tsp oregano, 1 tsp ground cumin, 1/2 tsp black pepper, and 1 tsp salt; stir to bloom the spices, about 20 seconds.

Prepare the tomato-chipotle sauce

Roughly chop the canned whole tomatoes and transfer them to a blender with the dried chipotle peppers (remove seeds if you want milder heat), the reserved 1 cup poaching liquid (or 1 cup chicken stock if you prefer more flavor), and 1 tbsp lime juice. Add the halved roma tomato and 1 clove garlic from the sofrito ingredients for extra freshness. Blend until smooth. Taste and adjust for salt and heat (use less chipotle if needed).

Combine and simmer

Pour the blended tomato-chipotle sauce into the skillet with the sautéed onions and garlic. Add the bay leaf and the remaining 1 cup chicken stock (if you used poaching liquid, add up to 1/2–1 cup stock to reach desired consistency). Bring to a gentle simmer, reduce heat to medium-low, and simmer uncovered 10 minutes to let flavors meld and sauce thicken slightly. Add the shredded chicken and simmer an additional 8–10 minutes so the meat absorbs the sauce, stirring occasionally. Taste and adjust salt, pepper, or lime juice.

Finish

Remove bay leaf. Stir in 1 tbsp fresh lime juice. If sauce seems too thin, simmer 2–3 more minutes; if too thick, add up to 2 tbsp reserved poaching liquid or stock. Keep warm while preparing tortillas and toppings.

Sofrito / base and aromatics

This section is largely folded into the Chicken Tinga steps: before making the tomato sauce, heat 1 tsp vegetable oil in a small skillet over medium heat. Add the 1/2 cup diced white onion and 1 clove garlic and sauté until translucent, about 3–4 minutes. Add these softened aromatics to the blender with the tomatoes and chipotles to create a rounded, less-acid sauce.

Warm the tortillas

Heat a dry cast-iron skillet or comal over medium-high heat. Warm each corn tortilla 20–30 seconds per side until pliable and lightly toasted in spots. Keep tortillas covered in a clean towel to stay warm and soft.

Assemble the tacos

Place about 2–3 tbsp of the warm chicken tinga onto each tortilla. Top with a pinch of diced white onion, a sprinkle of chopped cilantro, a little crumbled queso fresco or cotija, and a few shreds of cabbage or a slice of avocado if using. Serve with lime wedges on the side for squeezing.

Serve

Serve immediately while hot. Offer extra hot sauce or pickled onions on the side. Leftover tinga keeps refrigerated up to 3 days and reheats gently over low heat with a splash of stock to loosen the sauce.
