Add 2 oz gin, 0.5 oz dry vermouth and 0.5 oz elderflower liqueur to a cocktail shaker.

Combine base spirits

Add 0.5 oz fresh lemon juice, 0.25 oz simple syrup and 2 dashes orange bitters to the shaker with the spirits.

If using egg white for a silky texture, add 0.5 oz (about half an egg white) to the shaker. This is optional; omit for a clear, spirit-forward drink.

Seal the shaker and shake vigorously without ice for 10–15 seconds to emulsify the egg white (if used) and incorporate the ingredients.

Dry shake

Open the shaker, add ice (enough to fill the shaker) and shake again vigorously for 12–15 seconds until the shaker is well chilled and slightly frosted.

Double-strain the cocktail into a chilled coupe or Nick & Nora glass to remove small ice chips and any foam solids.

Express a lemon twist over the drink and drop it in, or float an edible flower on the foam for a seasonal presentation.
