Method
Fish & Marinade
Prepare and Marinate Fish
Pat the fish fillets dry with paper towels and cut into 1/2–3/4-inch wide strips or bite-sized pieces suitable for tacos. In a bowl combine lime juice, olive oil, minced garlic, ground cumin, chili powder, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper. Add the fish pieces and toss gently to coat. Let marinate for 15–20 minutes refrigerated (no more than 30 minutes so the acid doesn't 'cook' the fish).
Seasoning Adjustment
After marinating, taste a small piece (optional) or check the marinade balance; adjust salt/pepper if needed before cooking.
Cabbage Slaw
Make the Slaw
In a large bowl combine shredded cabbage, grated carrot, and chopped cilantro. In a separate small bowl whisk together mayonnaise, Greek yogurt (or sour cream), lime juice, honey (if using), 1/2 teaspoon salt, and 1/4 teaspoon black pepper until smooth. Pour the dressing over the cabbage mixture and toss until well coated. Taste and adjust seasoning; refrigerate while you cook the fish to let flavors meld (10–15 minutes).
Toppings & Sauce
Make the Creamy Chipotle Sauce
In a small bowl combine crema or sour cream, minced chipotle in adobo (if using), and 1 tablespoon water to thin. Whisk until smooth. Taste and add a pinch of salt or a squeeze of lime if desired. Transfer to a squeeze bottle or spoon for serving.
Prep Toppings
Slice the avocado and set aside. Warm the tortillas (see next section) and have lime wedges, cilantro leaves, and optional hot sauce or pico de gallo ready.
Cooking & Finish
Cook the Fish
Heat a large nonstick or cast-iron skillet over medium-high heat and add 1 tablespoon vegetable oil. Once shimmering, add the marinated fish pieces in a single layer, working in batches if necessary to avoid overcrowding. Cook undisturbed for 2–3 minutes until the underside is golden and slightly charred, then flip and cook another 1–2 minutes until opaque and just cooked through (total 4–5 minutes depending on thickness). Transfer cooked fish to a plate and season lightly with remaining kosher salt (2 tsp divided) and a little black pepper while hot.
Warm the Tortillas
Heat a separate skillet over medium heat. Lightly butter (optional) and warm each tortilla 20–30 seconds per side until pliable and slightly charred spots appear. Keep warm wrapped in a clean towel or in a tortilla warmer.
Assemble Tacos
Place 2–3 warmed tortillas on a plate. Add a couple of spoonfuls of cabbage slaw to each, top with 2–3 pieces of cooked fish, a slice or two of avocado, a drizzle of the creamy chipotle sauce, a few cilantro leaves, and a squeeze of lime. Add hot sauce or pico de gallo if using.
Serve
Serve immediately while fish and tortillas are warm. Provide extra lime wedges and sauce on the side.
