Prepare glass

Chill a coupe or martini glass by placing it in the freezer for a few minutes or filling it with ice and water while you prepare the cocktail.

Dry shake (if using egg white)

In a shaker, combine 2 oz gin, 0.5 oz violet liqueur, 0.75 oz fresh lemon juice, 0.25 oz simple syrup, and 0.5 egg white. Seal the shaker and shake vigorously without ice for 10–15 seconds to emulsify and create foam.

Wet shake

Add 1 cup of ice to the shaker. Shake vigorously for 12–15 seconds until the shaker is cold to the touch and the mixture is well chilled and aerated.

Strain and serve

Discard the ice/water from the chilled glass if used. Double-strain the cocktail through a Hawthorne strainer and a fine mesh strainer into the chilled coupe to produce a silky texture and remove any small ice shards or egg solids.

Garnish

Express the oils of a lemon twist over the surface and drop it into the drink, or float an edible flower. Serve immediately.
