Method
Preparation of Prime Rib
Season the Prime Rib
Rub the prime rib roast with salt, black pepper, and garlic powder. Ensure that the seasoning is evenly distributed.
Cook the Prime Rib
Preheat your oven to 350°F (175°C). Place the seasoned prime rib on a roasting pan and roast it for about 1 hour or until it reaches your desired level of doneness (medium-rare is recommended).
Rest the Prime Rib
Once cooked, remove the prime rib from the oven and let it rest for at least 15 minutes before slicing. This allows the juices to redistribute within the meat.
Preparing the Au Jus
Make the Au Jus
In a saucepan, heat the beef broth over medium heat. Bring it to a simmer and allow it to cook for 10 minutes, reducing slightly.
Assembling the Sandwich
Slice the Prime Rib
Thinly slice the rested prime rib against the grain.
Prepare the Rolls
Slice the French rolls in half and lightly toast them if desired.
Build the Sandwich
Layer the sliced prime rib onto the bottom half of each roll. If using, add the cheese slices and caramelized onions on top.
Serve with Au Jus
Place the top half of the rolls on the sandwiches and serve each with a small bowl of au jus for dipping.
