Brewing Process
1. Prepare the Mash
In a large pot, heat the water to 70°C (158°F). Add the pale malt and crystal malt, stirring to ensure all grains are wet. Let it mash for 60 minutes.
2. Sparging
After mashing, sparge the grains with hot water to extract sugars, collecting the liquid (wort) in a separate pot.
3. Boil the Wort
Bring the wort to a boil, then add the hops. Boil for 60 minutes, stirring occasionally.
4. Add Flavorings
In the last 10 minutes of the boil, add the corn flakes, lime zest, coriander, and jalapeño. Stir well.
5. Cool the Wort
After boiling, cool the wort quickly using an immersion chiller or an ice bath.
6. Fermentation
Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal the vessel with an airlock. Allow fermenting at around 12°C (54°F) for 2-3 weeks.
