Prep & bake potatoes
Bake whole potatoes
Place potatoes directly on the oven rack or on a baking sheet and roast for 45–60 minutes, until the skins are crisp and a skewer inserts easily into the flesh. Cooking time depends on potato size. Remove from oven and let cool until comfortable to handle, about 15 minutes.
Halve and scoop
Cut each potato in half lengthwise. Using a spoon, carefully scoop out most of the flesh, leaving about 1/4 inch (6 mm) of potato attached to the skin to maintain structure. Reserve the scooped potato for another use (or mash for garnish).
Crisp the skins
Brush the inside and outside of the potato skins lightly with a little olive oil (about 1–2 tsp total) and place cut-side down on a baking sheet. Return to 425°F oven and bake 8–12 minutes more until edges begin to brown and the skins are crisp. Flip cut-side up and bake another 3–5 minutes. Remove and set aside.

Cook bacon
While potatoes bake, slice the bacon crosswise into 1/2-inch pieces. In a large skillet over medium heat, cook bacon pieces until crisp, about 8–10 minutes, stirring occasionally. Transfer bacon to a paper-towel-lined plate and reserve 1 tablespoon of bacon fat in the skillet; drain the rest.
Sweat onion
Add the diced yellow onion to the reserved bacon fat over medium heat. Cook, stirring, until softened and translucent, about 4–5 minutes. Remove from heat and let cool slightly.
Bechamel & cheese filling
Make roux
In a medium saucepan over medium heat, melt the unsalted butter. Once bubbling, add the all-purpose flour and whisk continuously for 1–2 minutes until the mixture is pale and smells slightly toasty (do not brown).
Add milk and cream
Slowly whisk in the whole milk and cream a little at a time to avoid lumps. Bring mixture to a gentle simmer while whisking; simmer 3–4 minutes until slightly thickened to coat the back of a spoon.
Finish bechamel
Remove from heat and stir in Dijon mustard, nutmeg, salt, and black pepper. Add grated cheddar and parmesan, whisking until melted and smooth. Taste and adjust seasoning as needed. Fold in half of the cooked bacon, half of the swept onion (reserve rest for topping), and half of the chopped herbs and half the jalapeño (reserve remainder for garnish). The sauce should be thick but pourable—if too thick, add up to 2 tablespoons milk.
Assemble & bake
Fill skins
Lower oven temperature to 400°F (200°C). Arrange the crisp potato skins cut-side up on a baking sheet. Spoon the warm bechamel-cheese mixture into each skin, filling generously but not overflowing.
Top and gratin
Scatter the remaining bacon pieces and reserved sautéed onion over each filled skin. Sprinkle a light dusting of extra grated cheddar or parmesan if desired. Bake at 400°F for 8–10 minutes, until the filling is bubbly and top begins to brown.
Finish & serve
Garnish
Remove skins from oven and let rest 2–3 minutes. Dollop with sour cream if using, then sprinkle with remaining chives, parsley, and sliced jalapeño for brightness and heat. Adjust salt/pepper to taste.
Serve
Serve hot as an appetizer or shareable snack. Provide extra napkins — these are rich and best eaten immediately.
