Warm the glass

Preheat an Irish coffee glass (or heatproof mug) by filling it with hot water for 30–60 seconds. Discard the water and dry the glass so the drink stays hot longer.

Dissolve sugar / combine spirits

If using demerara sugar (not rum or syrup), add 1 tsp demerara sugar to the warmed glass. Pour in 2 tbs Irish whiskey (Powers or similar) and 6 oz hot strong coffee. Stir briskly for 10–15 seconds until the sugar fully dissolves. If using 1 tbsp demerara rum or demerara sugar syrup, add the rum/syrup and whiskey to the glass first, then pour the coffee and stir to combine.

Taste and adjust

Taste the coffee and adjust sweetness or strength: add up to 1 tsp additional demerara sugar or another 0.5 tbs whiskey if desired. Stir to incorporate.

Whip the cream

In a small chilled bowl, pour 2 tbs cold heavy cream and add 0.25 tsp vanilla extract (optional). Using a small whisk or fork, whip the cream until it just holds soft peaks — it should be pourable but thick enough to float. Be careful not to overwhip into stiff peaks.

Float the cream

Gently spoon or pour the whipped cream over the back of a spoon held just above the coffee surface so the cream floats as a distinct layer on top of the hot coffee.

Garnish and serve

Grate fresh nutmeg (about 1 tsp) over the cream to finish. Serve immediately without stirring so the drink is enjoyed by sipping the hot coffee through the cool cream.
