Brew Tea
Brew a strong black tea by steeping 2-3 good black tea bags or 2 tablespoons loose-leaf black tea in 2 cups of just-boiled water for 5 minutes. Remove leaves or bags and let the tea cool to room temperature (about 20–30 minutes). If using star anise or grated ginger for aromatics, add them to the hot tea and steep together, then remove.
Combine Spirits and Citrus
In a large heatproof pitcher or bowl, combine 1 cup dark rum, 1/2 cup brandy, 1/2 cup bourbon, 3/4 cup fresh lemon juice, 1/2 cup fresh orange juice, 1/2 cup simple syrup, and the cooled tea. Stir thoroughly to combine.
Optional Seasoning
Add 6 dashes of Angostura bitters and 1/4 teaspoon salt to the mixture if using. These help balance and round flavors; stir well.
Warm Slightly
If the punch is cool, gently warm the combined mixture to about 95–105°F (35–40°C). You want it noticeably warm but not hot — this encourages better curdling when milk is added. If already warm from tea, proceed; if cold, place the bowl in a warm water bath and stir until it reaches the target temperature.
Add Milk to Clarify
Slowly pour 1 3/4 cups of whole milk into the warm punch mixture while stirring gently. Stir once or twice to incorporate, then stop. Allow the mixture to sit undisturbed for 30–60 minutes. During this time the milk will curdle and the curds will trap impurities and acid, producing a clear-looking liquid separated from the curds.
Fine If Needed
If after 60 minutes the curd layer is sparse or you suspect insufficient curdling (this can happen with very high-proof spirits or very cold mixtures), stir in the additional 1/4 cup whole milk, let sit 10–20 minutes more, then proceed.
Clarification & Straining
Prepare Filtration Setup
Line a fine-mesh strainer with a few layers of cheesecloth or a coffee filter and set it over a clean large bowl or another pitcher. For best results, fit the cloth so liquid can drip through slowly; clarity increases with slower filtration.
First Strain
Pour the curdled punch through the cheesecloth-lined strainer in a single steady stream. Do not press or squeeze the curds—allow gravity to do the work. The liquid that passes through will be cloudy at first but will clear as it drips through. This first pass removes the bulk of the curds.
Secondary Filtration
Once the majority of liquid has drained, transfer the filtrate back into the strainer lined with a fresh coffee filter or a double layer of new cheesecloth and filter again. This secondary filtration (which can take 30–90 minutes) greatly increases clarity. If you have a paper coffee filter, you can set it in a dripper cone and let the liquid drip slowly for best results.
Patience for Clarity
Allow filtration to continue until the liquid is noticeably clear and free of curd particles. Total clarification time (including sitting and filtering) is typically 1.5–3 hours depending on flow rate and desired clarity. Refrigerate the receiving container if ambient temperature is warm.

Taste the clarified punch. If it tastes flat, brighten with an additional teaspoon or two of lemon or orange juice, or add a tablespoon of simple syrup if it needs sweetness. Strain any added adjustments through a fresh filter if added after clarification.
Storage
Store any remaining clarified punch in a sealed bottle in the refrigerator for up to 2 weeks. Clarity may increase over time; shake gently before serving if contents have settled.
