Cheeses

Method

Cheeses

1

Bring cheeses to temperature

Remove all cheeses from the refrigerator 30–45 minutes before serving. Let them rest at room temperature on the counter (unwrapped or lightly covered). This brings out aroma and flavor and makes softer cheeses easier to spread.

2

Prepare cheeses for serving

Cheddar: leave a wedge or block and slice 6–8 thin slices or small bite-sized cubes for guests. Brie: keep whole wheel or half wheel; score a shallow crosshatch on top to make spreading easier. Manchego: slice into 2–3 mm-thick wedges or fan slices. Arrange each cheese separately on the board with a dedicated knife or spreader to avoid flavor transfer.

Accompaniments

3

Prepare jams, honey and bowls

Spoon fig jam into one small serving bowl and place on the board. Pour the honey into a second small bowl or a small jar with a honey dipper. Place bowls near cheeses that pair well (fig jam near manchego or cheddar; honey near brie).

4

Arrange nuts and fruit

If using whole nuts, give them a quick chop if large (e.g., walnut halves) so they’re easy to pick up. Scatter mixed nuts in small piles between cheeses rather than in one heap. Wash and pat dry grapes; keep them on stems if possible. Place grapes in a cluster or in small bunches around the board to add color and make grabbing easy.

5

Prepare crackers and bread

Arrange assorted crackers in small stacks or fanned rows. If serving toasted baguette slices, toast them until lightly golden and crisp, then cool slightly and place near the brie so guests can spread with honey or jam.

6

Garnish

Tuck rosemary sprigs in several places for aromatic garnish and visual height. Add small empty spaces between elements to make the board look abundant but organized.

Assembly & serving

7

Place the cheeses on the board first, spaced roughly evenly: one at top, one at bottom left, one at bottom right. Add the jam and honey bowls near cheeses that pair best. Fill in gaps with piles of nuts, clusters of grapes, and crackers. Provide a dedicated knife or spreader for each cheese and one spoon/dipper for the jam and honey. Serve the board at room temperature (cheeses left for the 30–45 minutes) and replenish items as needed. Estimated total serving pieces: serves 4–6.

Notes & pairings

8

Suggestions: pair with a crisp white wine like Sauvignon Blanc, a fruity red like Pinot Noir, or a light ale. Adjust quantities upward for larger parties. Keep perishable items refrigerated until 30–45 minutes before serving and discard uneaten soft cheese after 4 hours at room temperature.
