Bring cheeses to serving temperature
Remove all cheeses from refrigeration 30–45 minutes before serving and let sit at room temperature on a plate, loosely covered. This allows flavors and textures to open up.
Prepare cheese shapes
Trim rind if desired: leave the rind on the brie and cheddar; optionally remove a small portion from one end of the goat cheese log to create a clean slice. For visual variety, cut the cheddar into 1/4-inch slices and a small cheese wedge, leave the brie whole or cut into wedges, and slice the goat cheese log into medallions.

Toast nuts
Preheat a small dry skillet over medium heat. Add walnuts and almonds and toast, stirring frequently, until fragrant and lightly browned, 3–5 minutes. Transfer to a bowl to cool. When cool, toss lightly with 1/2 tsp honey (from the measured honey) and a pinch of flaky sea salt to enhance flavor.
Prepare bread and crackers
If using baguette, preheat oven to 375°F (190°C). Brush slices lightly with olive oil, place on a baking sheet, and toast for 6–8 minutes until crisp and just golden. Let cool. Arrange crackers on the serving board.
Plate jams, honey and fruit
Spoon fig jam into a small ramekin or jar and place on the board. Pour the remaining honey into a small dish for drizzling. Rinse and pat grapes dry; keep small clusters intact for visual appeal. Core and thinly slice pear or apple just before serving to prevent browning; optionally toss slices in a few drops of lemon juice (not listed) if you expect a long hold time.
Assemble nuts
Pile toasted nuts in a small mound or in a shallow bowl and place on the board near cheeses that pair well with nuts (cheddar and goat cheese).
Garnish
Place rosemary sprigs between cheese and accompaniments for aroma and color. Scatter a few extra crackers and fruit slices to fill any empty spaces on the board.
Seasoning
Lightly sprinkle the brie and exposed goat cheese slices with a pinch of flaky sea salt to highlight flavors. Drizzle 1 tbsp honey over the goat cheese or brie if desired.
Serve
Arrange the prepared cheeses on a wooden board or large platter with crackers, toasted nuts, jam, honey, grapes, and sliced fruit. Provide separate cheese knives for each cheese (soft cheese knife for brie/goat, forkable cheddar knife). Serve immediately at room temperature. Leftovers: refrigerate cheeses and perishables promptly; bring cheeses back to room temperature before re-serving.
