Method
Beet Purée
Purée
When beets are tender, transfer to a blender or food processor. Add lemon juice, black pepper, and 1–2 tbs water or stock as needed. Purée until smooth, scraping down sides. Adjust seasoning with additional salt or lemon. Keep warm or hold at room temperature.
Pan Drippings Sauce (savory component)
Finish sauce
Taste and season with 1/4 tsp salt and a pinch of black pepper. If you want a silkier sauce, whisk in an additional 1/2 tbs cold butter off heat. Keep warm.
Yogurt Finish
Prepare yogurt
In a small bowl, combine 3/4 cup Greek yogurt, lemon zest, 1/2 tbs lemon juice, honey (if using), and 1/8 tsp salt. Whisk until smooth and adjust brightness with more lemon juice or a pinch more salt to taste. Chill briefly if desired.
Pistachio Praline & Garnish
Make praline
Line a small baking sheet with parchment. In a small heavy skillet over medium heat, combine 2 tbs sugar and 1 tsp water. Swirl, without stirring, until the sugar dissolves and turns a deep amber (watch closely—2–4 minutes). Remove from heat and quickly stir in the chopped pistachios to coat evenly.
Cool and break
Pour the nut-sugar mixture onto the parchment and spread thin. Sprinkle with 1/8 tsp sea salt. Let cool completely, then break into small shards or chop coarsely. Reserve a tablespoon for garnish and the rest for texture.
Finish
Just before plating, stir 1 tsp olive oil into the reserved praline crumbs to create a slightly glossy drizzle—alternatively use plain praline pieces for crunch. Have microgreens or dill ready for garnish.
Assembly & Plating
Warm shallow serving plates. Spoon a generous smear of beet purée across the center of each plate (about 1/3 cup purée per serving).
Dot or spoon 2–3 tbs of the yogurt finish along the beet smear, leaving some beet visible. Using a spoon, create small quenelles or dollops for visual contrast.
Spoon 1–2 tbs of the warm pan drippings sauce over and beside the beet purée to create dark 'bloody' accents. Use sparing streaks for dramatic effect.
Serve immediately so the sauce is warm and contrasts with the cool yogurt.
