Place the bottle in the refrigerator for at least 2 hours before serving, or chill in an ice bucket with a 1:1 mix of ice and water for 20–30 minutes until it reaches about 6–8°C (43–46°F). Brut Nature is best served well chilled to highlight freshness and acidity.

Chill the bottle

Select clean white wine flutes or tulip-shaped sparkling wine glasses. Rinse briefly with cold water and drain so the glass is cool; this helps preserve the bubbles and aroma.

Prepare glassware

Remove the foil and loosen the muselet (wire cage) while keeping your thumb over the cork. Tilt the bottle at a 45° angle away from people and slowly twist the bottle (not the cork) to ease the cork out with a quiet pop. For Brut Nature (no dosage), avoid excessive agitation to preserve the delicate mousse.

Open the bottle

Pour a small amount into the first glass and swirl gently to check aroma and clarity, then fill each glass to about one-third full (90–120 ml) to allow the aromas to concentrate. Brut Nature is low in residual sugar—take note of its pronounced freshness, mineral notes, and red-fruit character typical of Blanc de Noirs from Côte des Bars.

Pour

Keep the bottle in the ice bucket between pours to maintain optimal serving temperature. If serving over a prolonged period, top up the ice as needed.

Maintain temperature

Shuck fresh oysters shortly before serving and place on a bed of crushed ice. Offer lemon wedges on the side. The bright acidity and saline minerality of Brut Nature complement the briny oysters.

Prepare oysters or shellfish

Place blanched almonds in a small bowl. Spread soft goat cheese on bite-sized crostini or crackers. The wine's structure and subtle red-fruit notes pair well with the tang of chèvre and the nuttiness of almonds.

Arrange almonds and cheese

Top small toasted bread rounds with a smear of crème fraîche or butter, a slice of smoked salmon, and a sprig of dill. Arrange on a platter and serve alongside the wine.
