Citrus Juices

Method

Prepare Juices

  1. 1

    Juice fruit

If using whole fruit, squeeze fresh oranges and a small grapefruit to yield the measured amounts. Strain through a fine-mesh sieve into a measuring cup to remove pulp and seeds, unless you prefer pulp in the cocktail.

  2. 2

Measure 3 oz fresh orange juice, 0.5 oz fresh grapefruit juice and 0.5 oz cranberry juice into a small mixing glass or pitcher. Taste and add up to 0.25 tsp simple syrup only if the blend is too tart for your preference. Stir gently to combine.

Assemble Cocktail

  1. 3

Chill a flute or champagne coupe. Pour the prepared juice blend into the glass, filling about one-third (roughly 4 oz of total liquid including sparkling).

  2. 4

Slowly top with 4 oz chilled dry sparkling wine. Pour gently down the side of the glass or over the back of a spoon to preserve bubbles and avoid excessive foam. The final ratio should be approximately 3.5:4 juice to sparkling (adjust to taste).

Garnish & Serve

  1. 5

Garnish with an orange twist or wheel on the rim. Optional: float 2–3 fresh cranberries in the glass for color.

  2. 6

Serve immediately while sparkling is lively.
