Toast base

Avocado topping

Optional add-on (salmon +6)

Method

Toast base

  1. 1

    Prepare and toast bread

Brush both sides of the sourdough slices lightly with extra-virgin olive oil (and butter, if using). Toast in a skillet over medium heat for 2–3 minutes per side until golden and crisp, or use a toaster/oven under broiler for 2–4 minutes until edges are crisp. Keep warm.

Chive cream cheese

  1. 2

    Make chive cream cheese

In a small bowl, combine room-temperature cream cheese, finely chopped chives, lemon zest, lemon juice, salt, and black pepper. Stir until smooth and homogenous. Taste and adjust salt or lemon as desired.

Avocado topping

  1. 3

    Prepare avocado

Halve, pit, and scoop the avocado into a bowl. Mash with a fork to a slightly chunky consistency. Stir in lime or lemon juice, sea salt, and red pepper flakes. Taste and adjust seasoning. Keep covered until ready to use to minimize browning.

Roasted peppers & garnish

  1. 4

    Prep roasted peppers

Drain and pat the jarred roasted peppers dry. Slice into 1/4–1/2-inch strips. If you prefer warmed peppers, quickly warm them in a skillet for 1–2 minutes with a drizzle of oil.

  2. 5

    Assemble toast

Spread an even layer (about 2 oz / half the chive cream cheese mixture) of chive cream cheese over each toasted slice. Divide mashed avocado between the slices and gently spread or dollop to cover. Top each slice with roasted red pepper strips, sprinkle minced chives, microgreens or arugula, flaky sea salt, and freshly ground black pepper.

  3. 6

    Optional salmon add-on

If using smoked salmon, layer thin slices on top of the avocado after spreading. Scatter capers (if using) sparingly over the salmon, then finish with the flaky salt and black pepper.

  4. 7

    Serve

Serve immediately while toast is still crisp. If preparing for later, keep components separate and assemble just before serving to maintain texture.
