    Whisk yoghurt

    In a medium bowl, combine the Greek yoghurt, honey, vanilla extract and lemon zest. Whisk until smooth and slightly aerated, tasting and adjusting sweetness with up to 1 additional tablespoon honey if desired.

    Cover and chill in the refrigerator while you prepare the compote so flavours meld and the yoghurt is nicely chilled for layering.

Seasonal Fruit Compote

    Prepare fruit

    If using large stone fruit or apples/pears, pit and chop into roughly 1/2-inch pieces. If using berries, rinse and drain gently. Measure 2 cups of total fruit.

    Cook compote

    In a small saucepan over medium heat, combine the chopped fruit, sugar, lemon juice, and water. Stir to combine and bring to a gentle simmer. If using apples/pears or stone fruit, add the cinnamon. For extra depth, stir in the optional liqueur or orange juice at this stage.

    Reduce heat to medium-low and simmer, stirring occasionally, for 6–10 minutes until the fruit has softened and released juices and the mixture has slightly thickened. For berries, 4–6 minutes may be sufficient; for firmer fruit, cook toward the longer end. Taste and adjust sugar or lemon if needed.

    If you prefer a smoother compote, lightly mash some of the fruit with the back of a spoon or use an immersion blender for 3–5 seconds. Remove from heat and let cool to room temperature; the compote will thicken as it cools.

Assembly & Garnish

    Layer yoghurt and compote

    Spoon a couple of tablespoons of chilled yoghurt into serving glasses or bowls. Add a swirl or spoonful (about 1–2 tablespoons) of the cooled compote on top, then another layer of yoghurt. Create a visible swirl or ripple by gently dragging a spoon through layers to create a marbled effect. Reserve a little compote to top each serving.

    Add crunch and finish

    Top each portion with about 2 tablespoons of granola or toasted nuts for crunch. Drizzle a little extra honey or maple syrup over the top if desired and garnish with fresh mint leaves.

    Serve immediately for best texture (crunchy topping) or cover and refrigerate up to 8 hours if assembling ahead — add granola just before serving to keep it crunchy.
