    Slice and toast

    Preheat oven to 400°F (200°C). Slice the loaf into 12–14 slices about 1/2 inch thick. Arrange on a baking sheet in a single layer.

    Brush both sides of each slice lightly with 3 tablespoons extra-virgin olive oil and sprinkle with coarse sea salt. Toast in the oven 8–10 minutes, flipping once, until golden and crisp.

    Remove from oven and while still warm, rub the cut side of the halved garlic cloves over the top of each slice to impart a gentle garlic aroma. Set aside.

Wild Mushroom Topping

    Prepare mushrooms

    Wipe mushrooms clean and roughly chop larger pieces so all are bite-sized. Pat dry with paper towel to remove excess moisture.

    Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil and 1 tablespoon unsalted butter. When the butter foams, add the minced shallot and sauté 1–2 minutes until fragrant and translucent.

    Add the mushrooms in a single layer (you may need to do this in two batches to avoid steaming). Cook undisturbed 3–4 minutes until well browned on one side, then stir and continue to cook 3–4 minutes until all pieces are golden and any released liquid has mostly evaporated.

    Stir in 1 teaspoon fresh thyme, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Pour in 2 tablespoons white wine or stock and scrape up any browned bits from the pan. Cook 1–2 minutes until liquid reduces and mushrooms are glossy. Taste and adjust seasoning. Keep warm.

Roasted Figs & Chestnut Purée

    Roast figs

    Increase oven to 425°F (220°C) if needed. Place halved figs cut-side up in a shallow baking dish. Dot with 1 teaspoon butter and sprinkle with 1 teaspoon brown sugar or drizzle a little honey if using. Roast 10–12 minutes until figs are soft, caramelized at the edges and syrupy. Remove and let cool slightly.

    Finish chestnut purée

    If the chestnut purée is thick, loosen it with 1 teaspoon lemon juice and 1–2 teaspoons water to a spreadable consistency. Warm gently in a small saucepan over low heat for 2–3 minutes, stirring. Taste and adjust salt or sweetness if needed.

Walnuts & Garnish

    Toast walnuts in a small dry skillet over medium heat 3–4 minutes, stirring, until fragrant and slightly darker. Remove and chop coarsely. Combine with microgreens or parsley if using.

    Have balsamic glaze and finishing salt ready to finish the bruschetta.

Assembly

    Spread about 1–2 tablespoons chestnut purée onto each toasted bread slice, leaving a small border.

    Top each with 1–2 tablespoons of the warm sautéed wild mushrooms, arranging pieces so they sit attractively.

    Place one roasted fig half (or two small pieces) atop the mushrooms on each slice.

    Sprinkle each bruschetta with a pinch of chopped toasted walnuts and a few microgreens or parsley leaves.

    Drizzle a small amount (about 1/4 teaspoon) of aged balsamic or glaze over each piece and finish with a light pinch of fine sea salt. Serve immediately while toast is warm and mushrooms and figs are slightly warm.
