    Crack the 6 eggs into a medium bowl. Add 1 cup whole milk, 1 teaspoon salt, and 1/2 teaspoon freshly ground black pepper. Whisk vigorously until homogenous and slightly frothy (about 30 seconds).

    Place a nonstick skillet over medium-low heat and add 2 tablespoons unsalted butter. Allow butter to melt and foam but not brown (about 1–2 minutes).

    Cook eggs slowly

    Pour the egg mixture into the skillet. Allow eggs to sit undisturbed for 15–20 seconds until edges begin to set. Using a silicone spatula, gently push cooked edges toward the center, tilting the pan to let uncooked egg run underneath. Continue gently folding every 15–20 seconds until mostly set but still moist and slightly glossy — total cooking time about 4–6 minutes on medium-low heat.

    Halve and pit 2 ripe avocados. Scoop flesh into a bowl and mash with a fork until mostly smooth with some chunkiness. Stir in 1 tablespoon lemon juice, 1 teaspoon extra-virgin olive oil, 1/4 teaspoon red pepper flakes, and 1/2 teaspoon sea salt. Taste and adjust lemon or salt.

Pan-seared Breakfast Sausage
