Whisk eggs
Crack the 6 eggs into a medium bowl. Add 1 cup whole milk, 1 teaspoon salt, and 1/2 teaspoon freshly ground black pepper. Whisk vigorously until homogenous and slightly frothy (about 30 seconds).

Prep pan
Place a nonstick skillet over medium-low heat and add 2 tablespoons unsalted butter. Allow butter to melt and foam but not brown (about 1–2 minutes).

Cook eggs slowly
Pour the egg mixture into the skillet. Allow eggs to sit undisturbed for 15–20 seconds until edges begin to set. Using a silicone spatula, gently push cooked edges toward the center, tilting the pan to let uncooked egg run underneath. Continue gently folding every 15–20 seconds until mostly set but still moist and slightly glossy — total cooking time about 4–6 minutes on medium-low heat.

Finish with herbs
Remove the pan from heat when eggs are softly set (carryover will finish them). Stir in 2 tablespoons finely chopped chives and 1 tablespoon chopped parsley. Adjust seasoning to taste with additional salt or pepper if needed. Keep warm.

Prepare avocado spread
Halve and pit 2 ripe avocados. Scoop flesh into a bowl and mash with a fork until mostly smooth with some chunkiness. Stir in 1 tablespoon lemon juice, 1 teaspoon extra-virgin olive oil, 1/4 teaspoon red pepper flakes, and 1/2 teaspoon sea salt. Taste and adjust lemon or salt.

Cook sausages
Heat a large skillet over medium heat and add 1 tablespoon olive oil. Add 8 sausage links in a single layer, leaving space between them. Cook for 12–14 minutes, turning every 2–3 minutes so all sides brown evenly and internal temperature reaches 160°F (71°C) for pork (follow package guidance for plant-based). If sausages brown too quickly, reduce heat to medium-low and cover for the last few minutes.

Transfer sausages to a plate and let rest 3–5 minutes before serving to redistribute juices.

In a medium bowl, combine 1 cup quartered strawberries, 1 cup blueberries, 1 cup diced pineapple, and 1 segmented orange (remove membrane pieces for cleaner texture).

Drizzle 1 tablespoon honey over the fruit and toss gently to combine. Sprinkle 1 tablespoon chopped fresh mint, toss once more, and chill briefly or serve immediately.
