Vegetable Platter

Wash all vegetables thoroughly under cold running water. Pat dry with a clean kitchen towel or spin dry in a salad spinner.

Remove core and seeds from bell peppers, then cut into 1/2-inch-wide strips about 3–4 inches long.

Wash celery and trim ends. Cut into 3–4-inch sticks.

Rinse sugar snap peas and trim any stringy edges. Rinse cherry tomatoes and leave whole. Trim radish tops and cut in half if large.

If using baby greens, spread them as a loose bed on the serving platter to add color and keep dips slightly elevated.

Hummus

Prep chickpeas (optional step for extra-smooth hummus)
For a smoother hummus, peel a few chickpea skins by rubbing chickpeas between your fingers. This is optional.

In a food processor, combine drained chickpeas, tahini, fresh lemon juice, peeled garlic clove, ground cumin, and 1 teaspoon salt.

Taste and adjust seasoning with more salt or lemon juice if desired.

Spoon hummus into a serving bowl, smooth the top with the back of a spoon, drizzle with 1 teaspoon olive oil and sprinkle smoked paprika and toasted sesame seeds if using.
Guacamole

Cut avocados in half, remove pits, and scoop flesh into a medium bowl.

Mash avocados with a fork to your preferred texture (slightly chunky recommended for dipping).

Add fresh lime juice immediately and mix to stop browning.

Stir in finely chopped red onion, chopped cherry tomato, chopped cilantro, salt, black pepper, and optional chopped jalapeño. Taste and adjust lime and salt to balance flavors.

Transfer guacamole to a serving bowl and smooth the top. Optionally drizzle a few drops of olive oil and press a few cilantro leaves for garnish.
Finishing & Serving

Garnish hummus with a sprinkle of smoked paprika and a small drizzle of olive oil. Garnish guacamole with a cilantro sprig and a lime wedge on the side.

Serve immediately at room temperature with extra lemon/lime wedges. If not serving right away, cover guacamole tightly with plastic wrap (pressing the wrap directly onto the surface) to minimize browning and refrigerate until ready; bring to room temperature before serving.
