Make simple syrup
Combine the granulated sugar and hot water in a heatproof measuring cup or small saucepan. Stir until the sugar is completely dissolved to form a simple syrup. Let the syrup cool for 5–10 minutes until warm (not boiling).

Juice the lemons
If you haven't already, roll the lemons on the counter while pressing down to release juices, then cut and juice until you have 1 cup (about 4–6 medium lemons). Strain the juice through a fine mesh sieve into a pitcher to remove seeds and excess pulp if you prefer a smoother lemonade.

Combine ingredients
Add the warm (or cooled) simple syrup to the pitcher with the lemon juice. Pour in 3.5 cups cold water and stir well. Taste and adjust: if too sweet, add up to 0.5 cup more cold water; if too tart, stir in 1–2 more tablespoons sugar dissolved in a little warm water.

Chill and serve
Fill glasses with ice. Pour lemonade over ice, garnish with lemon slices and mint sprigs if using, and sprinkle the optional lemon zest on top for extra aroma. Serve immediately. Store leftovers refrigerated for up to 4–5 days; stir before serving as separation may occur.
