Orange Juice

Method

Orange Juice

    Prepare fruit

    Roll the oranges on the counter with moderate pressure to loosen juices. Cut each orange in half crosswise.

    Juice

    Using a manual or electric citrus juicer, extract juice from all orange halves into a measuring cup. Strain through a fine mesh sieve into a pitcher if you prefer pulp-free juice.

    Adjust

    Stir in 1/4 cup cold water to slightly dilute and 1/2 tsp lemon juice if desired. Taste and add up to 1 tsp sugar or honey if oranges are not sweet enough.

    Serve

    Pour over ice (about 4 cubes) into a serving glass. Serve immediately chilled.

Apple Juice

    Prepare apples

    Wash apples thoroughly. Core and roughly chop into pieces; peeling is optional (leave peel on for more nutrients and flavor). Toss chopped apples with 1 tsp lemon juice to reduce browning.

    Juice or blend

    If using a juicer: feed apple pieces through the juicer and collect the juice. If using a blender: add apple pieces and 1/4 cup cold water to the blender and puree until very smooth, then press through a fine mesh sieve or cheesecloth into a pitcher to remove solids.

    Adjust

    Taste the juice and add up to 1/2 tsp sugar or honey if apples are tart. Stir well.

    Serve

    Pour into a glass over ice (4 cubes). Serve immediately for best flavor.

Pineapple Juice

    Prepare pineapple

    Cut off top and bottom of the pineapple, stand upright, slice away the peel, and remove eyes. Core the pineapple and cut the flesh into chunks.

    Juice or blend

    If using a juicer: process the pineapple chunks through the juicer. If using a blender: combine pineapple chunks with 1/4 cup cold water and blend until smooth, then press through a fine mesh sieve to remove fibrous bits.

    Adjust

    Stir in 1/2 tsp lime juice for brightness and up to 1/2 tsp sugar only if the pineapple is underripe. Add additional water (a tablespoon at a time) if juice is too thick.

    Serve

    Fill a glass with ice (4 cubes) and pour the juice over it. Serve immediately.

Cranberry Juice

    Cook cranberries

    Combine 2 cups cranberries and 1 cup water in a medium saucepan. Bring to a simmer over medium heat, then reduce heat and simmer until cranberries burst and soften, about 10 minutes.

    Sweeten and strain

    Stir in 2 tablespoons sugar or honey while still warm, adjusting to taste (cranberries are quite tart). Remove from heat and let cool briefly. Pour the mixture through a fine mesh sieve or cheesecloth into a pitcher, pressing on solids to extract as much liquid as possible; discard solids.

    If desired, stir in 1/2 tsp orange or lemon zest for aroma. Chill or serve over ice (4 cubes). Taste and adjust sweetness if necessary.
