Reuben-style Burger Sauce (Rubens Burger Sauce)

    Make the sauce

    In a medium bowl combine mayonnaise, ketchup, Dijon mustard, chopped dill pickles (or relish), drained sauerkraut, Worcestershire sauce, apple cider vinegar, hot sauce, and black pepper. Stir until smooth and well combined. Taste and adjust seasoning — add a little more vinegar for brightness, more pickle or relish for tang, or more hot sauce for heat. Cover and refrigerate at least 15 minutes to let flavors meld.

    Prepare bacon

    Preheat oven to 400°F (200°C). Place bacon slices on a rimmed baking sheet lined with foil or parchment in a single layer. Bake for 12–16 minutes until crisp but not overly brittle. Remove and drain on paper towels. When cool, halve each slice crosswise to fit sliders if desired.

    Form patties

    Place the ground beef in a bowl. Sprinkle salt, black pepper, and smoked paprika over the meat. Gently mix just until combined — do not overwork. Divide meat into 6 equal portions (about 2.7 oz each). Form each portion into a thin round patty slightly larger than the slider bun, with a shallow dimple in the center to prevent puffing.

    Cook patties

    Heat a large skillet or griddle over medium-high heat and lightly oil or spray. When hot, place patties in a single layer (work in batches if needed). Cook 2–3 minutes on the first side until a brown crust forms. Flip and cook about 1–2 minutes more. Place a slice of cheddar on each patty during the last minute of cooking; cover with a lid briefly to melt the cheese.

    Toast buns

    While patties cook, spread softened butter on cut sides of slider buns. Toast buttered buns on a clean skillet or under a broiler until golden, about 1–2 minutes, watching closely to avoid burning.

    Assemble sliders

    Spread about 1 tablespoon of Rubens Burger Sauce on the bottom half of each toasted bun. Place the cheesy patty on top, then a piece of bacon (or a half slice if you halved them). If using, add 2 slices of dill pickle and a sprinkle of chopped chives. Top with the bun crown and press gently to set.

    Arrange sliders on a platter and serve immediately while warm. Extra sauce can be served on the side for dipping.
