Preparation

Mashing

1. Prepare the Mash

Stir the grains into the water, ensuring there are no dry clumps. Maintain the temperature for about 60 minutes.

2. Sparging

After an hour, sparge (rinse) the grains with another 5 liters of hot water at about 170°F (77°C) to extract more sugars. Collect the liquid (wort) in a separate pot.

Boiling

3. Boil the Wort

Bring the wort to a boil. Once boiling, add 1 oz of Northern Brewer hops and boil for 60 minutes.

4. Add Flavor Hops

In the last 15 minutes of the boil, add 0.5 oz of Saaz hops for aroma and flavor.

Cooling and Fermentation

5. Cool the Wort

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 65°F (18°C).

6. Pitch the Yeast

Transfer the cooled wort to a sanitized fermenter and pitch the German Lager yeast. Seal the fermenter with an airlock.

Bottling

7. Prepare for Bottling

After fermentation is complete (about 2 weeks), dissolve 0.75 cups of corn sugar in 2 cups of boiling water. Let cool.

8. Bottle the Beer

Add the cooled sugar solution to the fermenter, mix gently, and then bottle the beer into sanitized bottles. Cap securely.

Aging

9. Age the Beer

Let the bottles sit at room temperature for about 2 weeks for carbonation. After that, refrigerate the beer for a couple of days before serving.
