Harvesting Grapes

Crush the harvested grapes to extract juice. Ensure to keep the stems and seeds as minimal as possible.

Crushing Grapes

Add 0.5 kg of yeast to the crushed grape mixture. Allow the mixture to ferment in a controlled environment at 20-25°C for 7-14 days.

Fermentation

Once fermentation is complete, press the mixture to separate the wine from the solids. Collect the free-run wine.

Pressing

Add 0.2 kg of oak chips and 0.1 kg of cedar chips to the wine. Transfer the wine to an oak barrel or glass container for aging for 6-12 months.

Aging

After aging, add 0.01 kg of sulfites to stabilize the wine before bottling.

Sulfite Addition

To enhance the wine's flavor, add 100 g of red currants and 100 g of Bing cherries during the last month of aging. Allow the flavors to meld.

Flavor Infusion

In the final stages before bottling, add 50 g of toasted marshmallow essence to impart warmth and sweetness to the wine.
