Habanero-infused Tequila
Prepare and infuse
Choose a clean 8-12 oz glass bottle or jar with a tight-fitting lid. Wash the habanero and dry thoroughly. Using a small sharp knife, make 2–3 small slits in the habanero to expose the seeds (do not remove seeds unless you want less heat). Place the whole pepper into the bottle and pour 8 oz of tequila over it. Seal the bottle and gently shake to distribute.
Steep and check heat: Let the tequila infuse at room temperature out of direct sunlight. Begin tasting after 30 minutes by smelling and then dipping a clean spoon to sample a few drops; continue until it reaches your preferred heat level. For a very spicy profile, steep 2–6 hours; for moderate heat, 30–90 minutes. Once desired heat is reached, remove the pepper to prevent over-extraction of bitter compounds. Store infused tequila refrigerated and use within 2–4 weeks.
Cocktail Assembly
Prepare glass and rim (optional): If salting the rim, rub the lime wedge around the outside edge of a rocks glass, then dip the rim lightly into coarse salt to coat. Fill the glass with ice.
Combine ingredients: In a cocktail shaker, add 2 oz habanero-infused tequila, 1.5 oz fresh pineapple juice, 1 oz fresh lime juice, and 0.5 oz agave syrup. Add a handful of ice (about 1 cup) to the shaker.
Shake: Secure the shaker and shake vigorously for 10–15 seconds until the outside of the shaker is frosty and the ingredients are well chilled and slightly diluted.
Strain and serve: Strain the cocktail over the prepared rocks glass filled with fresh ice. Use a fine or hawthorne strainer to keep small ice chips out if desired.
Garnish: Garnish with a pineapple wedge on the rim. For an extra visual and spicy cue, float a very thin slice of habanero (seeds removed if desired) on top or attach to the garnish. Serve immediately with a napkin and warning: 'Not for the faint of heart.'
Adjustments and notes: If the drink is too hot, add 0.25–0.5 oz more pineapple juice or agave to balance heat and acidity. If too sweet, increase lime by 0.25 oz. Always taste and adjust with small increments.
