If the bottle has been stored at room temperature, place it upright in the refrigerator for 30–45 minutes to bring the wine to the ideal serving range (14–16°C / 57–61°F). If already cool, remove from refrigerator 10–15 minutes before serving so it isn’t excessively cold.

Chill to service temperature

Check the label, vintage and capsule. Wipe the top of the bottle with a clean cloth to remove dust or residue before opening.

Inspect the bottle

Using a corkscrew, cut the capsule below the lip, remove the foil, then insert the worm into the center of the cork. Twist and pull the cork out smoothly. If cork breaks, use an Ah-So or push the cork gently through and decant to remove cork bits.

Open the bottle

For clarity and to allow the wine to breathe, decant the wine if desired: pour the wine slowly into a clean decanter in one steady motion. Decanting for 20–45 minutes can open aromatics and soften tannins, especially if the wine shows youthful tightness or sediment.

Decanting (optional)

Pour 120–150 ml (about 4–5 oz) into each red wine glass, filling to the widest part of the bowl to allow swirling and aroma development. Avoid overfilling.

Pouring

Present the wine: note its deep ruby color. Swirl gently to release aromas—expect red and black fruit (cranberry, cherry, blackcurrant), Provençal herbs (garrigue), gentle pepper and earth. On the palate, look for medium body, ripe fruit, balanced acidity and fine tannins. Serve alongside charcuterie, aged cheeses, olives and crusty bread. Provide water for palate cleansing between tastings.

Tasting & serving notes

If you have leftover wine, re-cork the bottle (use original cork or stopper), store upright in the refrigerator and consume within 3–5 days. For longer freshness, use a vacuum pump or inert gas preservative.

Storage of opened bottle

Arrange charcuterie, cheeses, olives and bread on a board. Slice cheeses and bread just before serving to preserve texture. Keep stronger-flavored items (e.g., cured meats) separate from milder cheeses so guests can combine as preferred.

Encourage tasting order: start with lighter cheeses and milder charcuterie, progress to richer, more savory items. Sip water between samples to reset the palate.
