Muddle
Place 8 fresh mint leaves into a cocktail shaker or mixing glass. Add the simple syrup and fresh lime juice. Gently muddle the mint 4–6 times — press just enough to release the aromatic oils without shredding the leaves (over-muddling makes the drink bitter).
Build
Add the Roku Japanese gin (1.5 oz) and JM rhum agricole (1 oz) to the shaker. Fill the shaker with ice to chill the mixture.
Shake
Secure the shaker lid and shake vigorously for about 10–12 seconds until the outside of the shaker is cold to the touch and well-diluted.
Strain
Fill a highball or Collins glass with fresh ice (about 1 cup). Double-strain the shaken mixture into the glass using a Hawthorne strainer and a fine mesh strainer (this removes small mint bits and ice shards while retaining the suspended mint aroma).
Top & finish
Top the cocktail with approximately 2 oz of chilled soda water. Gently stir once or twice with a bar spoon to integrate the soda without flattening the carbonation. Slap a mint sprig between your palms to activate its aroma and tuck it into the drink alongside a lime wheel or wedge on the rim.
Serve
Serve immediately while cold and effervescent. Provide a straw if desired.
