Rice & seasoning
Rinse rice
Place 2 cups short-grain sushi rice in a fine-mesh sieve or bowl. Rinse under cold water, gently agitating, until the water runs nearly clear (about 3–5 rinses).
Cook rice
Combine rinsed rice and 2.2 cups water in a rice cooker or medium saucepan. If using a saucepan, bring to a boil, reduce to low, cover and simmer 15 minutes. Remove from heat and let rest covered for 10 minutes.
Season rice
Meanwhile, warm 3 tbs rice vinegar, 1.5 tsp sugar, and 1/2 tsp salt in a small saucepan over low heat or in a microwave until sugar dissolves. Transfer cooked rice to a large shallow bowl or hangiri. Pour seasoning over rice and fold gently with a paddle or spatula to combine while fanning or letting steam escape until rice reaches slightly above room temperature (cool but still warm).

Prepare Spam
Open the Spam can and remove the loaf. Slice the Spam crosswise into 8 even slices (about 1/2 inch / 12 mm thick each). Pat slices lightly with paper towel to remove excess moisture.
Pan-fry Spam
Heat 1 tsp vegetable oil in a nonstick skillet over medium heat. Add Spam slices and fry 2–3 minutes per side until golden brown and slightly caramelized. Transfer to a plate.
Make glaze & coat Spam
Lower heat to medium-low. Add 2 tbs soy sauce, 1 tbs mirin, and 1 tbs sugar to the pan (if pan is dry, add a splash of water). Stir and simmer 30–60 seconds until sugar dissolves and glaze thickens slightly. Return Spam to the pan and spoon glaze over slices, cooking 30–45 seconds more until evenly coated and sticky. Remove from heat.
Assembly & garnish
Prepare nori
Cut nori sheets into strips roughly 4 x 6 inches if they are not already in that size. Keep nori crisp and ready to wrap.
Shape rice
Line the inside of your musubi maker or mold with plastic wrap (if using). Fill the musubi mold about two-thirds full with warm seasoned rice (about 3/4 cup rice per musubi if making 8, adjust as needed). Press rice evenly and firmly into a compact rectangle using the press or the back of a spoon. If not using a mold, wet your hands slightly, shape about 3/4 cup of rice into a compact rectangle approximately matching the Spam slice size.
Assemble musubi
Place one glazed Spam slice on top of each rice block. Use the musubi mold top or your hand (with plastic wrap) to press Spam gently onto rice so it adheres. Wrap a strip of nori around the rice + Spam, overlapping the ends and sealing by moistening the overlapping nori edge with a drop of water or a dab of glaze; press to secure. Repeat for remaining pieces.
Finish & serve
Optional: sprinkle toasted sesame seeds and a pinch of furikake on top of each Spam slice. Let musubi rest 2–3 minutes for the nori to soften slightly and seal. Serve warm or at room temperature. Store any leftovers in the refrigerator wrapped tightly and consume within 24–48 hours; reheat gently before serving.
