Prepare fresh juices

If you don't have pre-made juices, press or strain fresh pineapple, orange and guava to yield the amounts listed (2 cups pineapple, 1 cup orange, 1 cup guava). Chill briefly so the cocktail is cold.

Mix base

In a shaker or mixing pitcher, combine 2 cups fresh pineapple juice, 1 cup fresh orange juice, 1 cup fresh guava juice, 2 oz light rum, 0.5 oz simple syrup (if you prefer sweeter), 0.5 oz fresh lime juice, and 2 dashes Angostura bitters (optional).

Shake or stir

Add ice to the shaker (about 1 cup) and shake vigorously 10–12 seconds until well chilled. If using a mixing pitcher, stir with a bar spoon for 20–30 seconds over plenty of ice to chill and dilute slightly.

Prepare glass

Fill a large Collins or highball glass with cracked ice (about 2 cups).

Strain

Double-strain the shaken mixture into the prepared glass over the cracked ice to remove pulp and shards.

Finish with house rum

Float or gently pour 1 oz house (dark) rum over the top of the drink for the 'punch' — pour slowly over the back of a spoon if you want a layered look.

Garnish & Serve

Garnish the glass with a pineapple wedge and a lime wheel on the rim. Add a mint sprig for aroma if desired.

Serve immediately with a straw. Encourage the drinker to stir lightly to blend the floated house rum into the P.O.G. for an even 'punch' effect.
