Prepare cucumber

Take 3 thin slices from an English cucumber. Reserve one long thin ribbon or peel for garnish. Lightly muddle the three thin slices in the bottom of a mixing glass to release cucumber juice and aroma — about 6–8 gentle presses with a bar muddler (do not pulverize).

Build and shake

Add 1.5 oz Pimm's No.1, 0.5 oz mezcal, 0.75 oz fresh lemon juice, and 0.5 oz simple syrup to the mixing glass with the muddled cucumber. Fill the mixing glass with ice (large cubes). Shake vigorously for about 12–15 seconds until well-chilled and slightly diluted.

Prepare glass

If serving on the rocks: fill a double old-fashioned glass with fresh large ice cubes or crushed ice. If serving as a cooler: use a Collins or highball glass and fill with ice. Place a thin cucumber ribbon around the inside of the glass (press to adhere) if desired.

Strain and top

Double-strain the shaken mixture into the prepared glass using a fine mesh strainer to catch cucumber solids. If desired, top with ~1.5 oz soda water for a lighter finish.

Garnish and finish

Garnish with the reserved cucumber ribbon, a lemon wheel on the rim, and an optional mint sprig. Serve immediately.
