Method

Bloody Mary Mix (makes ~4 cocktails)

Combine

In a large pitcher or bowl, pour 4 cups tomato juice and 1/2 cup fresh lemon juice.

Season

Add 2 tablespoons prepared horseradish, 2 tablespoons Worcestershire sauce, 2 teaspoons hot sauce, 1 teaspoon soy sauce, 1 teaspoon smoked paprika, 1 teaspoon freshly ground black pepper, 1 teaspoon celery salt, 1/2 teaspoon sea salt and 1/2 teaspoon granulated sugar.

Adjust

Whisk thoroughly to combine. If the mix is too thick or intensely flavored, stir in up to 1/4 cup cold water a tablespoon at a time to reach your desired balance and consistency. Taste and adjust lemon, hot sauce or salt to preference.

Chill

Cover and refrigerate the mix for at least 30 minutes to let flavors meld. The mix can be stored in the refrigerator up to 4 days in an airtight container.

Crispy Spam Garnish (makes ~8 slices)

Prepare Spam

Open the 12 oz can of Spam and remove the block. Using a sharp knife, slice the Spam crosswise into 8 even slices (about 1/4"–1/3" thick).

Crisp

Heat a nonstick or cast-iron skillet over medium-high heat. Add 1 tablespoon neutral oil and swirl to coat. When shimmering, add Spam slices in a single layer (work in batches if necessary). Cook 2–3 minutes per side until deeply browned and crisp at the edges.

Season & Drain

Remove browned slices to a paper towel-lined plate and sprinkle with a little freshly ground black pepper. Let cool slightly; slices will crisp further as they cool.

Optional oven finish

For extra crispness, transfer pan-fried slices to a baking sheet and roast at 400°F (200°C) for 5–7 minutes.

Skewer & Garnish

Assemble skewers

Thread 1 slice of cooled crispy Spam and 3 pitted green olives onto a cocktail skewer. Make one skewer per cocktail. If desired, add a small lemon wedge on the skewer or a folded celery leaf for visual contrast.

Build the Bloody Duchess (per cocktail)

Rim the glass (optional)

Rub a lemon wedge around the rim of a tall glass and dip the rim in coarse salt or celery salt to coat lightly.

Fill with ice

Fill the prepared glass with 1 cup of cubed ice.

Pour

Add 2 oz Haku vodka over the ice, then pour 4 oz of the chilled Bloody Mary mix into the glass.

Stir

Gently stir once or twice to integrate vodka and mix without over-diluting.

Garnish & serve

Place the Spam & olive skewer across the top of the glass and add a lemon wedge and optional celery stalk. Serve immediately.
