In a large mash tun, combine the pale malt, crystal malt, and chocolate malt with 5 gallons of filtered water. Heat the water to 165°F (74°C) and add the grains. Stir well and maintain the temperature at around 152°F (67°C) for 60 minutes.

Prepare the Mash

After mashing, sparge the grains with hot water (about 170°F or 77°C) to collect the wort. Aim for approximately 6 gallons of wort in total.

Sparging

Transfer the wort to a large kettle and bring it to a boil.

Bring to Boil

Once boiling, add the East Kent Goldings hops and boil for 60 minutes. Add the Fuggle hops in the last 15 minutes of the boil.

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel and pitch the Scotch Ale yeast. Seal the vessel with an airlock.

Pitch the Yeast

Allow the beer to ferment for about 2 weeks at a temperature between 65°F and 70°F (18°C to 21°C).

Fermentation

After fermentation, dissolve the priming sugar in a small amount of boiling water and let it cool. Add this to the beer before bottling.

Prepare for Bottling

Transfer the beer into sanitized bottles and cap them. Allow the bottles to carbonate for about 1-2 weeks at room temperature.
