Method
Crispy Parmesan Zucchini Rounds with Lemon-Garlic Aioli
Prepare zucchini
Wash zucchini and trim the ends. Slice into 1/4-inch thick rounds and place in a single layer on a paper towel-lined tray. Lightly pat the slices to remove surface moisture.
Set up breading station
Place the flour in a shallow bowl and season with 1/2 tsp salt and 1/4 tsp pepper. In a second bowl, whisk the eggs with 2 tbs milk. In a third bowl, combine panko breadcrumbs, grated Parmesan, cornmeal (if using), 1/2 tsp garlic powder, remaining 1/2 tsp salt and 3/4 tsp pepper.
Bread the rounds
Working in batches, dredge each zucchini slice in flour (shake off excess), dip into the egg mixture, then press into the breadcrumb mixture to coat both sides. Place breaded slices on a baking sheet while you finish the rest.
Pan-fry until golden
Heat a large nonstick skillet over medium heat and add 2 tbs olive oil. When hot, add a single layer of zucchini rounds (do not overcrowd). Fry 2–3 minutes per side until deep golden and crisp. Add more oil as needed and transfer cooked rounds to a wire rack set over a sheet pan to keep crisp. Repeat until all rounds are cooked. Keep warm in a low oven (200°F / 95°C) if needed.
Make lemon-garlic aioli
In a small bowl combine mayonnaise, minced garlic, lemon zest and 1 tbs lemon juice, 1 tbs chopped parsley, 1/4 tsp salt and 1/8 tsp pepper. Taste and adjust seasoning. Chill for at least 10 minutes for flavors to meld.
Serve
Arrange zucchini rounds on a platter and spoon or pipe small dollops of lemon-garlic aioli on each. Garnish with remaining chopped parsley and extra lemon zest. Serve immediately while crisp.
Spicy Watermelon, Feta & Mint Skewers with Chili-Honey Drizzle
Prepare ingredients
Cut watermelon into 12 equal 1-inch cubes (about 3 cups total). Cut feta into similar-sized cubes. Rinse and pat dry mint leaves. If using wooden skewers, soak them briefly if desired to prevent burning (not necessary for cold appetizers).
Assemble skewers
Thread onto each skewer in this order: watermelon cube, folded mint leaf, feta cube, another mint leaf. Repeat until all 12 skewers are assembled. Arrange on a serving board.
Make chili-honey drizzle
In a small bowl combine honey, red chili flakes, and juice of 1/2 lime (about 1/2 tbs). Stir until blended. Taste and add more chili flakes for heat or more lime for brightness.
Finish and serve
Lightly drizzle the chili-honey over the skewers, then sprinkle with a pinch of sea salt and a grind of black pepper. Serve immediately so watermelon remains chilled and juicy.
Mini Herbed Mushroom Tartlets (Phyllo Cups)
Sauté mushrooms
Heat butter and 1 tsp olive oil in a medium skillet over medium-high heat. Add the minced shallot and sauté 1 minute until fragrant. Add chopped mushrooms and spread into an even layer. Let cook undisturbed 2–3 minutes to develop color, then stir and continue cooking until mushrooms release moisture and most of it evaporates, about 5–6 minutes total. Season with 1/2 tsp salt, 1/4 tsp pepper and 2 tsp fresh thyme. Remove from heat and let cool slightly.
Prepare filling
In a small bowl combine ricotta, goat cheese, and half of the sautéed mushroom mixture. Stir until smooth and well combined. Taste and adjust seasoning with a pinch more salt or thyme if needed.
Fill phyllo cups and bake
Preheat oven to 350°F (175°C). Spoon about 1 tsp of the ricotta-mushroom filling into each mini phyllo shell, then top each with a small mound of remaining mushrooms. Sprinkle a little grated Parmesan on top of a few for a golden finish. Place tartlets on a baking sheet and bake 8–10 minutes until heated through and edges of phyllo are crisp.
Garnish and serve
Remove from oven and let cool 2 minutes. Garnish each tartlet with a small thyme leaf and serve warm or at room temperature.
