Sweet Potato Waffle Fries
Preheat and prepare
Preheat oven to 425°F (220°C). Line two large rimmed baking sheets with parchment paper or lightly grease, and set a wire rack on a sheet if you prefer extra crisping.
Cut waffle fries
Wash and peel the sweet potatoes if desired. Using a crinkle/waffle cutter, slice sweet potatoes into waffle-style fries: slice one direction, rotate 90 degrees and slice again so each piece has the waffle pattern. Aim for pieces about 1/4-inch thick so they crisp without burning.
Dry the fries
Place the cut fries in a clean kitchen towel or paper towels and blot firmly to remove as much surface moisture as possible. Removing moisture helps them crisp in the oven.
Coat with cornstarch and oil
In a large bowl combine cornstarch and spices: cornstarch, smoked paprika, garlic powder, ground cumin, kosher salt, black pepper, and cayenne (if using). Add the dried sweet potato waffles to the bowl. Drizzle 3 tablespoons olive oil over them and toss gently but thoroughly until each piece is lightly coated and the dry mix clings to the surface.
Arrange and space
Arrange the coated waffle fries in a single layer on the prepared baking sheets. Ensure pieces do not overlap; use both sheets if needed. For extra airflow and crispness, place on a wire rack set inside the sheet pan so heat circulates underneath.
Bake
Bake at 425°F (220°C) for 12 minutes, then rotate the pans and flip fries gently. Continue baking another 10–14 minutes until edges are browned and crisp but not burnt. Total bake time is typically 22–26 minutes depending on thickness of slices and oven. Watch closely from minute 18 onward.
Finish crisping (optional)
If you want extra crispness, switch oven to broil for 1–2 minutes at the end, watching constantly to prevent burning. Alternatively, increase temperature to 450°F for the last 3–5 minutes.
Finishing & Serving
Remove fries from oven and immediately sprinkle with chopped parsley or cilantro and grated Parmesan, if using. Squeeze lime wedges over to brighten the flavor, or serve wedges on the side.
Transfer to a platter and serve hot with your chosen dipping sauce. These are best eaten the same day while crisp; if making ahead, reheat on a baking sheet in a hot oven (425°F) for 5–7 minutes to restore crispness.
