Prepare jalapeños

Wash jalapeños. Slice each jalapeño into 1/4–3/8-inch thick rounds, keeping seeds if you want more heat or scraping them out for milder bites. Pat rings dry with paper towels.

Make filling

In a medium bowl, combine softened cream cheese, shredded cheddar, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp salt, and 1/2 tsp black pepper. Stir until a smooth, uniform filling forms.

Fill jalapeño rings

Using a small spoon or piping bag, fill each jalapeño ring with about 1/2 to 3/4 teaspoon of the cheese mixture, mounding slightly so the top is flush with the edge of the pepper. Place filled rings on a baking sheet lined with parchment. Chill in refrigerator for 15–20 minutes to firm up the filling (this helps prevent filling leakage when frying).

Set up breading station

Place flour and cornstarch mixed together in a shallow bowl with a pinch of salt. In a second bowl whisk together eggs, 1/2 cup buttermilk and 1 tsp hot sauce (optional) until smooth. Put panko breadcrumbs in a third shallow dish.

Bread the bottle caps

Working in small batches, dredge each chilled, filled jalapeño ring in the flour mixture, shaking off excess. Dip into the egg-buttermilk mixture, then press into panko breadcrumbs until well coated. For extra-crisp double coating: after first panko coat, dip again in egg mixture and press into panko a second time. Place breaded rings on a tray and chill 10 minutes to set the crust.

Heat oil

Pour vegetable oil into a deep, heavy-bottomed pot to a depth of about 2–3 inches (approximately 4–6 cups depending on pot). Heat oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of bread: it should brown in about 60 seconds.

Fry until golden

Fry bottle caps in batches—do not overcrowd—about 2 to 3 minutes per side, turning once if needed, until golden brown and crisp. Maintain oil temperature around 325–350°F; lower slightly if browning too fast. Use a slotted spoon or spider to transfer fried bottle caps to a paper towel–lined tray to drain.

Finish and serve

Lightly season hot bottle caps with a pinch of salt. Serve immediately with chilled house made ranch on the side for dipping.

House Made Ranch

In a bowl, whisk together 1/2 cup mayonnaise and 1/2 cup sour cream until smooth.

Add 1/4 cup buttermilk and whisk to loosen to a dipping consistency (add a little more buttermilk if you prefer thinner ranch).

Stir in finely chopped chives, parsley, dill, 1/2 tsp garlic powder, 1/4 tsp onion powder, 1/2 tsp salt, 1/4 tsp black pepper and 1 tsp lemon juice. Taste and adjust seasoning or acidity as desired.

Refrigerate ranch for at least 30 minutes to let flavors meld. Give it a final stir before serving alongside jalapeño bottle caps.
