Marinated Chicken
Prepare marinade
In a medium bowl, whisk together olive oil, apple cider vinegar, soy sauce, brown sugar, minced garlic, smoked paprika, onion powder, salt, and black pepper until sugar dissolves and mixture is uniform.
Marinate chicken
Place chicken breasts in a resealable plastic bag or shallow dish. Pour marinade over chicken, massage to coat thoroughly, remove excess air, and seal. Refrigerate for at least 30 minutes and up to 4 hours (longer will increase flavor but avoid more than 8 hours to prevent texture change). If time is short, marinate 30 minutes at room temperature.
Bring to grill temperature
Remove chicken from refrigerator 20 minutes before grilling to come closer to room temperature; reserve marinade.
Grilling & BBQ Finish
Add cheese and rest
Move chicken to a cooler part of the grill (or reduce heat). Top each breast with a slice of Swiss cheese and close the lid for 1–2 minutes until cheese melts. Transfer chicken to a cutting board, tent loosely with foil, and rest 5 minutes.
Bacon & Assembly
Cook bacon
While chicken rests (or concurrently on a second burner), cook bacon until crisp. For stovetop: place bacon strips in a cold skillet, turn heat to medium, and cook turning occasionally 8–12 minutes until crisp. For oven: arrange on a rimmed baking sheet and bake at 400°F (200°C) for 12–18 minutes. Drain on paper towels and cut each strip in half if desired.
Finish and serve
Place each rested, cheese-topped chicken breast on a plate, arrange two slices of bacon on top of each (or 3-4 halves), spoon any remaining warmed BBQ sauce over the bacon if desired, and dot with a little butter for gloss. Sprinkle chopped parsley for garnish. Serve immediately.
