Make batter

In a medium bowl whisk together flour, sugar, baking powder and salt until combined. In a separate small bowl or measuring cup whisk milk, egg and melted butter until smooth. Pour wet ingredients into dry and stir just until combined; small lumps are okay. Do not overmix.

Preheat griddle

Heat a nonstick skillet or griddle over medium heat until hot (about 325–350°F / 160–175°C). Lightly grease with 1 tsp vegetable oil or butter, wiping off excess with a paper towel.

Cook pancakes

For each pancake, pour about 3 tablespoons of batter onto the hot griddle to form a small pancake (you should get three pancakes total). Cook until bubbles appear on the surface and the edges look set, about 1.5–2 minutes. Flip and cook until golden and cooked through, about 45–60 seconds more. Transfer to a warm plate; keep warm in a low oven (200°F / 95°C) if needed.

Cook ham

If using ham, heat a skillet over medium-high heat with a light brush of oil or a small pat of butter. Add ham slices and cook 1–2 minutes per side until warmed through and lightly caramelized. Transfer to plate and keep warm.

Cook sausage

If using sausage links or patties, place in a cold skillet and turn heat to medium. Cook links, turning frequently, for 8–10 minutes until browned and cooked through (internal temp 160°F/71°C). For patties, cook 4–5 minutes per side. Drain on paper towel and keep warm.

Cook bacon

If using bacon, add slices to a cold skillet and turn heat to medium. Cook 3–5 minutes per side, or until crispness desired. Drain on paper towel and keep warm.

Decide how you want your eggs (fried sunny-side up, over-easy, scrambled, or poached). For fried/over-easy and scrambled, use the instructions below. For poached, bring a shallow simmer and poach 3 minutes for runny yolks.

Fried / over-easy eggs

Heat a nonstick skillet over medium-low and add 1 tsp butter or oil. Crack eggs into the pan, season with 1/8 tsp salt and a pinch of pepper. For sunny-side up cook undisturbed until whites are set but yolks still runny, about 2–3 minutes. For over-easy, cook until whites set, gently flip and cook 10–15 seconds more for runny yolk (longer for firmer yolk).

Scrambled eggs

Beat the two eggs with salt and pepper. Heat skillet over medium-low with 1 tsp butter. Pour eggs in and let sit briefly, then gently stir and fold until curds form and eggs are just set, 1–2 minutes. Remove from heat immediately to avoid overcooking.

To Serve

Assemble plate with three pancakes, the chosen protein (ham, sausage or bacon) and two eggs prepared your way. Top pancakes with 1 tbsp butter and serve maple syrup (about 3 tbsp) on the side. Add fresh fruit if desired.

Estimated plating time: Serve immediately while pancakes and proteins are warm. If making multiple plates, keep items in a 200°F (95°C) oven to hold briefly.
