Sausage links
Heat 1 tsp vegetable oil in a skillet over medium heat. Add sausage links and cook 10–12 minutes, turning frequently, until browned and cooked through (internal temp 160°F / 71°C). Transfer to plate and keep warm.
Hash Browns
While the protein cooks (or immediately after), wipe or use the same skillet and add 1 tablespoon vegetable oil and 1 tsp butter; heat over medium-high until shimmering. Add the shredded hash browns in an even layer, season with 1/4 tsp salt and 1/8 tsp pepper. Press down with a spatula and cook undisturbed 4–5 minutes until the bottom is deeply golden and crisp.
Flip the hash brown mass in sections (or invert using a plate) and cook the other side 3–4 minutes until golden and cooked through. Transfer to the plate with the protein and keep warm.
Eggs
Use the skillet used for protein/hash browns, reduce heat to medium-low and add 1 tablespoon butter. Crack two eggs into a small bowl (one at a time) and gently slip into the pan. For sunny-side up: cover pan and cook 2–3 minutes until whites are set but yolks still runny. For over-easy: cook 2 minutes, gently flip and cook 20–30 seconds more. For scrambled: whisk eggs with 1/8 tsp salt and pinch pepper, pour into the pan and stir gently until softly set, about 1–2 minutes.
Season eggs with remaining pinch of salt and pepper, then transfer to the plate with hash browns and protein.
