Omelet

Beat eggs

Crack 3 large eggs into a medium bowl. Add 1 tablespoon whole milk, 1 teaspoon salt, and 1 teaspoon black pepper. Whisk vigorously until mixture is uniform and slightly frothy (about 20–30 seconds).

Heat pan

Place a nonstick skillet (8–10 inch) over medium-low heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan. The butter should foam but not brown.

Cook eggs

Pour the beaten eggs into the pan and let them sit undisturbed for 10–15 seconds until the edges begin to set. Use a silicone spatula to gently push the set edges toward the center, tilting the pan so uncooked egg flows to the edges. Repeat for about 1–2 minutes until the eggs are mostly set but still slightly glossy on top.

Add cheese and fold

Sprinkle 3 tablespoons shredded cheddar evenly over one half of the omelet. Using the spatula, fold the opposite half over the cheese to form a semi-circle. Let cook for another 20–30 seconds to melt the cheese inside.

Finish and rest

Slide the omelet onto a plate, turning off the heat. Let rest 30 seconds so the cheese finishes melting before serving.

Hash Browns

Preheat skillet

While prepping eggs or in a separate skillet, heat a 10-inch nonstick or cast-iron skillet over medium-high heat. Add 1 tablespoon vegetable oil and 1 tablespoon unsalted butter; heat until the butter foams and oil shimmers.

Cook potatoes

Spread 1 cup thawed shredded hash browns into an even layer in the hot skillet. Press down gently with a spatula to compact. Let cook without stirring for 3–4 minutes until the bottom is golden brown and crisp.

Flip and finish

Season the exposed side with 1 teaspoon salt and 1 teaspoon black pepper. Carefully flip the hash browns in sections (or invert onto a plate and slide back into the pan) and cook another 3–4 minutes until golden and crisp on the other side. Transfer to a plate and keep warm.

Toast

Toast bread

Toast 2 slices of bread in a toaster or under a broiler until golden to your preference (about 2–3 minutes).

Butter

Spread 1 tablespoon softened butter evenly over the hot toast and cut in half if desired.

To Serve

Arrange the cheese omelet on a plate alongside the hash browns and buttered toast. Offer ketchup and hot sauce on the side for the hash browns if desired. Serve immediately while hot.
