Omelet
Prepare eggs
Crack the 3 large eggs into a medium bowl. Add 2 tablespoons sour cream and 1 tablespoon whole milk. Season with 1 teaspoon salt and 1/4 teaspoon freshly ground black pepper. Whisk vigorously until the mixture is smooth, slightly frothy, and homogenous (about 20–30 seconds).
Cook omelet base
Heat a nonstick 10-inch skillet over medium-low heat. Add 1 tablespoon unsalted butter and swirl to coat. When butter is melted and foaming but not browned, pour in the egg mixture. Let it sit undisturbed for 10–15 seconds until edges begin to set.
Set and fill
Using a silicone spatula, gently push set edges toward the center, tilting the pan so uncooked eggs flow to the edges. When the top is still slightly runny but mostly set (about 1–1.5 minutes total), scatter the chopped cooked bacon (3 slices, chopped) evenly over one half, then sprinkle 1/2 cup shredded cheddar cheese on top.
Fold and finish
Carefully fold the omelet in half over the fillings with the spatula. Let it cook another 30–45 seconds to melt the cheese and warm the bacon through. If you prefer the omelet more cooked, reduce heat to low and cover the pan for 30 seconds. Slide the omelet onto a plate, sprinkle with 1 tablespoon chopped fresh chives if using, and keep warm while plating other components.
Hash Browns
Heat pan
While eggs rest, heat a separate 10-inch skillet over medium-high heat. Add 2 tablespoons vegetable oil and 1 tablespoon unsalted butter; swirl until butter melts and the fat shimmers.
Cook hash browns
Add 1 1/2 cups shredded hash browns in an even layer. Press down gently with a spatula to form a compact cake. Let cook undisturbed until the underside is deep golden brown, 4–5 minutes. Season the exposed top with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
Toast & Plating
Toast bread
Toast 2 slices of bread to desired doneness (use toaster or oven). Spread about 2 teaspoons butter total over the warm toast so it melts in.
Plate the breakfast
Place the omelet on a plate, add the hash browns alongside, and set the buttered toast on the side. Optionally garnish the omelet with extra chives and serve immediately while hot.
