Dough
1. Activate and mix
Combine warm water (about 105–115°F / 40–46°C), sugar, and instant dry yeast in a small bowl. Let sit 5 minutes until foamy. In a large bowl, whisk together flour and salt. Add yeast mixture and 2 tablespoons olive oil to flour. Stir until a shaggy dough forms.
2. Knead
Turn dough onto a lightly floured surface and knead for 6–8 minutes until smooth and elastic. Alternatively, knead in a stand mixer with dough hook on medium for 4–5 minutes.
3. First rise
Lightly oil a bowl with remaining 1 teaspoon olive oil, place dough in bowl, cover with plastic wrap or a damp towel, and let rise in a warm place until doubled, about 1 to 1¼ hours.
4. Shape
Punch dough down gently, divide if making two smaller pizzas (this recipe yields one 12–14" pizza). On a floured surface, shape dough into a round, stretch or roll to a 12–14 inch diameter with a slightly thicker rim. Transfer to a parchment-lined pizza peel or baking sheet dusted with flour/semolina.

5. Prepare sauce
In a small skillet or saucepan, warm 1 tablespoon olive oil over medium heat. Add minced garlic and cook 20–30 seconds until fragrant (don't brown). Add crushed tomatoes, dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Simmer gently for 6–8 minutes to thicken slightly. Taste and adjust seasoning. Remove from heat and let cool slightly.
6. Assemble cheese layer
Spread a thin, even layer of the tomato sauce over the stretched dough, leaving a 1/2–3/4" border for the crust. Distribute the fresh mozzarella evenly over the sauce, leaving small gaps for browning. Sprinkle grated Parmesan over the top.

7. Warm and finish prime rib
If prime rib is cold, warm briefly: pat slices dry, melt 1 tablespoon unsalted butter with 1 teaspoon olive oil in a skillet over medium-high heat. Add sliced prime rib in a single layer and sear 30–45 seconds per side just to warm and add a light crust. Season lightly with 1/4 teaspoon freshly ground black pepper. Remove from heat and keep warm. (Do not overcook — prime rib should remain medium-rare to medium.)
8. Add raw toppings before baking
Scatter the thinly sliced red onion evenly over the cheese. Arrange warmed prime rib slices across the pizza, tucking some under cheese for stability if desired.

9. Preheat oven
Place an oven rack in the lowest third of the oven and preheat oven to 500°F (260°C). If using a pizza stone, place it in the oven while preheating for at least 30 minutes.
10. Bake pizza
Slide the assembled pizza onto the hot stone or baking sheet. Bake for 8–12 minutes, rotating once halfway, until crust is golden and cheese is bubbling and lightly browned. If you prefer slightly more char on the top, move the pizza to the top rack for the final 1–2 minutes and watch carefully.

11. Rest and dress
Remove pizza from oven and let rest 2 minutes. Drizzle 3 tablespoons horseradish cream or to taste in thin ribbons across the pizza (or serve on the side if preferred). Scatter baby arugula over the hot pizza so it wilts slightly. Sprinkle chopped fresh parsley and a light finishing drizzle of 1 teaspoon olive oil. Finish with sea salt to taste.
12. Slice and serve
Transfer pizza to a cutting board, slice into 6–8 pieces, and serve immediately while hot, with extra horseradish cream on the side.
