Prepare wrappers
Lay out wonton wrappers on a clean, dry surface in a single layer with a damp towel over them to prevent drying while you work.

Seal method
Keep a small bowl of water nearby. Use your fingertip to moisten the edges of each wrapper to seal after filling.

Fry
Heat 1 cup vegetable oil in a heavy-bottomed skillet or saucepan over medium-high heat until it reaches 350°F (175°C) or a small piece of wrapper sizzles and browns in about 20–30 seconds. Fry wontons in batches (do not crowd) for 1.5–2.5 minutes per batch, turning occasionally, until golden brown and crisp. Remove with a slotted spoon to a paper-towel-lined plate to drain. Keep warm in a low oven (200°F / 95°C) if needed.
Shrimp filling

Chop shrimp
Roughly chop the shrimp into small 1/8–1/4 inch pieces. For a smoother texture, pulse 4–5 times in a food processor until coarsely minced but not paste-like.

Mix filling
In a medium bowl combine the chopped shrimp, finely chopped green onions, grated ginger, minced garlic, 1 tsp soy sauce, 1 tsp sesame oil, 1 tsp Shaoxing wine (if using), egg white, 1 tsp salt, 1/4 tsp white pepper, and 1 tsp cornstarch. Mix thoroughly with a fork until the mixture is slightly sticky and holds together.

Portion filling
Place about 1 teaspoon (heaping) of filling in the center of each wonton wrapper. Avoid overfilling to ensure proper sealing and even cooking.

Fold & seal
For square wrappers: fold wrapper in half diagonally to form a triangle, press out air, moisten edges and pinch to seal. Optionally bring the two opposite corners together and moisten to overlap and press to form the classic wonton shape. For round wrappers: place filling in center, fold edges up toward center, or fold in half and pinch as above. Ensure all edges are well sealed to prevent leaking during frying.
Dipping sauce (optional)

While the wontons fry, whisk together 2 tbs soy sauce, 1 tsp rice vinegar, 1/2 tsp sugar, and 1/2 tsp chili oil (if using). Taste and adjust balance—add more vinegar for tang, sugar for sweetness, or chili oil for heat. Sprinkle sesame seeds on top if desired.
