Chill the bottle

Fill an ice bucket with ice and about 1 cup cold water. Submerge the bottle for 10–15 minutes, turning once, until the bottle feels evenly chilled. Remove and dry the bottle with a cloth.

Quick chill (ice bucket)

Use a waiter’s corkscrew: cut and remove capsule, place worm into center of cork, screw down until last turn, and gently pull the cork out with steady pressure. Wipe the neck with a clean cloth and sniff briefly to ensure the wine smells as expected.

Open the bottle

Chalk Hill Chardonnay 2023 typically does not require decanting; however, if you prefer to aerate, pour the wine into a decanter and let it breathe for 15–20 minutes to open aromatics and slightly soften oak influence.

Decant (optional)

Hold the glass by the stem. Pour about 4–5 ounces (120–150 ml) per serving into chilled white wine glasses, filling no more than one-third to one-half of the bowl to allow the wine to breathe and concentrate aromas.

Garnish (optional)

Arrange 8 oz of soft-rind cheese (Brie or triple cream) on a small board. Serve at room temperature to bring out creaminess which complements the wine’s texture and oak.

Serve sliced grilled or roasted chicken or light seafood (seared scallops/grilled shrimp) warm or at room temperature alongside the wine. Light lemon or herb seasoning pairs well with the wine’s acidity and oak profile.

Protein pairing

Offer slices of crusty bread or crostini to cleanse the palate between sips and bites.
