    Bring steaks to room temperature

    Remove steaks from refrigerator 45–60 minutes before cooking and pat them dry on both sides with paper towels. Allowing steaks to warm slightly ensures even cooking.

    Season

    Generously season both sides and the edges of each steak with kosher salt (about 1 tablespoon per steak) and freshly ground black pepper. Press seasoning into the meat so it adheres.

    Preheat pan

    Place a heavy-duty cast-iron skillet or stainless-steel pan over high heat and let it get very hot for 5 minutes. Heat should be high enough to produce a loud sizzle when the steak touches the surface.

    Sear steaks

    Add 2 tablespoons of neutral oil to the hot pan and swirl to coat. Carefully place steaks in the pan, leaving space between them. Sear without moving for 2.5–3 minutes until a deep brown crust forms.

    Flip and baste

    Flip steaks and immediately add 3 tablespoons butter, crushed garlic cloves, thyme and rosemary to the pan. Tilt the pan slightly and, using a large spoon, continuously baste the steaks with the melted butter and aromatics for 2.5–4 minutes, spooning hot butter over the top to build flavor and aid even cooking.

    Check doneness

    Use an instant-read thermometer to check internal temperature: 120–125°F (49–52°C) for rare, 130–135°F (54–57°C) for medium-rare, 140–145°F (60–63°C) for medium. For a 1–1.25 inch thick steak, total cook time will usually be ~5–7 minutes; adjust for thickness and desired doneness.

    Rest

    Transfer steaks to a cutting board or plate and tent loosely with foil. Rest for 5–10 minutes to allow juices to redistribute; temperature will rise a few degrees during resting.

    Finish & serve

    If desired, sprinkle a pinch of coarse sea salt over each steak and top with a pat of compound butter. Slice against the grain and serve with chosen sides.

    Mashed potatoes (quick)

    If serving mashed potatoes, prepare ahead: boil peeled, chopped potatoes until fork-tender (15–20 minutes). Drain, mash with butter, warm milk or cream, salt and pepper to taste. Keep warm while steaks cook.

    Roasted vegetables (quick roast)

    Toss vegetables with 1 tablespoon oil, salt and pepper. Roast on a sheet pan at 425°F (220°C) for 12–18 minutes, stirring once, until tender and lightly charred. Finish with a squeeze of lemon if desired.
