    Stir together dairy and sugar

    Combine whole milk (0.25 cups), heavy cream (0.25 cups) and granulated sugar (1 tbs) in a small saucepan or microwave-safe bowl. Whisk until the sugar is mostly dissolved.

    Optional custard step

    If using the optional egg yolk for a richer, custard-like texture: whisk the half yolk in a small bowl until smooth. Temper the yolk by slowly whisking in about 1 tablespoon of the warm milk/cream mixture, then stir the tempered yolk back into the saucepan. Return pan to low heat.

    Heat to thicken (if using yolk) or warm

    Gently heat the milk/cream mixture over low to medium-low heat, stirring constantly, until it reaches steaming and slightly thickens — about 5–7 minutes. If using egg yolk, heat until it coats the back of a spoon (about 170°F/77°C). Do not boil.

    Add flavor and salt

    Remove from heat. Stir in vanilla extract (1 tsp) and a pinch of fine sea salt. Taste and adjust if needed.

    Cool quickly

    Place the small pot or bowl into an ice bath (use the 1/2 cup cold water in a larger bowl with ice if available) and stir occasionally until the mixture is cold, about 10 minutes. If the mixture is very warm, transferring to the refrigerator for 20–30 minutes works too.

    Churn by hand or freeze directly

    For a single scoop, you can use one of three simple methods: - Ice cream maker (small batch): pour the chilled base into the machine and churn according to manufacturer instructions (usually 15–25 minutes) until soft-serve consistency, then transfer to a small container and freeze 30–60 minutes to firm. - Manual shake method: pour mixture into a sealable jar, shake vigorously for 5–7 minutes, then place in freezer and stir every 15–20 minutes for 1–2 hours to break up ice crystals until scoopable. - Quick freeze in tray: pour into a small metal ramekin or shallow container and place in freezer; after 30 minutes stir vigorously with a fork, repeat every 20–30 minutes until smooth and scoopable (2–3 cycles). Choose the method you have available.

    Harden and serve

    Once the mixture has reached scoopable firmness, use a warmed ice cream scoop or spoon to make one generous scoop. Place in a small dish and add optional garnish (about 1 tbs of chocolate shavings, sauce, or sprinkles). Serve immediately.
