Lamb Filling

    Prep aromatics

    Finely chop 1/2 cup yellow onion, mince 2 garlic cloves, and grate 1 tsp fresh ginger. Measure spices and herbs so they are ready.

    Cook onions

    Heat 1 tablespoon vegetable oil in a skillet over medium heat. Add the chopped onion and a pinch of salt; cook, stirring occasionally, until soft and translucent, about 5–6 minutes.

    Brown lamb

    Increase heat to medium-high, add 1 pound ground lamb to the skillet. Break it up with a spatula and cook until it starts to brown, about 6–8 minutes.

    Add aromatics & spices

    Reduce heat to medium. Add the minced garlic and grated ginger; cook 30–45 seconds until fragrant. Stir in 1 tsp ground cumin, 1 tsp ground coriander, 1/2 tsp smoked paprika, 1/4 tsp red chili flakes, 1 tsp salt, and 1/2 tsp black pepper. Cook 1 minute to bloom the spices.

    Add tomato paste & yogurt

    Stir in 1 tablespoon tomato paste and 2 tablespoons plain yogurt to enrich the mixture and keep it moist. Cook 1–2 minutes until blended and the paste darkens slightly.

    Finish & herb

    Remove from heat and stir in 1/4 cup chopped cilantro, 2 tablespoons chopped mint, and 1 teaspoon lemon juice. Taste and adjust seasoning if necessary. Keep warm.

Pickled Red Onion

    Place 1 cup thinly sliced red onion in a small bowl or jar. In a separate cup, combine 2 tablespoons apple cider vinegar, 2 tablespoons water, 1 teaspoon sugar, and 1/4 teaspoon salt; stir until sugar and salt dissolve. Pour the pickling liquid over the onions, press them down so they are submerged, and let sit at room temperature for at least 15 minutes (or up to 1 hour) to quick-pickle. Drain before using.

Yogurt Sauce

    Whisk together 1/2 cup Greek yogurt, 1/2 teaspoon minced garlic, 1 teaspoon lemon juice, 1/2 teaspoon olive oil, 1/4 teaspoon ground cumin, 1/4 teaspoon salt, and 1/8 teaspoon black pepper until smooth. Taste and adjust acidity or salt as desired. Refrigerate until assembly.

Assembly & Toasting Naan

    Toast naan

    Preheat a skillet or grill pan over medium heat. Brush both sides of each mini naan lightly with melted butter (optional) and toast 1–2 minutes per side until warm and slightly charred. Alternatively, warm in a 350°F (175°C) oven for 5–7 minutes.

    Assemble sliders

    Spread about 1 teaspoon of the yogurt sauce onto each naan base. Spoon 2–3 tablespoons of the warm lamb mixture onto each naan. Top with a few pieces of pickled red onion, a small handful of microgreens or baby arugula (about 1 tablespoon), and a sprinkle of fresh cilantro leaves.

    Serve

    Stack or serve open-faced as sliders. Offer extra yogurt sauce and lemon wedges on the side. Serve immediately while lamb and naan are warm.
