    Combine dairy and sugar

    In a medium saucepan, combine 1 cup whole milk and 3 tablespoons granulated sugar. Warm over medium heat, stirring frequently, until sugar is fully dissolved and milk is warm but not boiling (about 3–5 minutes).

    Add cream and salt

    Remove saucepan from heat. Stir in 2 cups heavy cream and a pinch of salt. Let the mixture cool for 10 minutes so it is slightly warm.

    Add vanilla and chill

    Stir in 2 teaspoons vanilla extract. Cover the saucepan and refrigerate the mixture until completely cold, at least 2 hours or preferably overnight (about 4–12 hours). Chilling improves texture.

    Churn

    Once the base is thoroughly chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions (typically 20–30 minutes) until it reaches a soft-serve consistency.

    Add mix-ins and freeze

    If using mix-ins, fold them in during the last 3–5 minutes of churning or gently stir them into the churned ice cream. Transfer the ice cream to a freezer-safe container, press a piece of plastic wrap directly on the surface to prevent ice crystals, seal with a lid, and freeze until firm, about 3–4 hours.

Optional mix-ins

    If adding chopped chocolate, nuts, or fruit, prepare them before churning: chop chocolate into small pieces, toast nuts briefly in a dry skillet until fragrant and cooled, or warm fruit compote slightly so it is pourable. Add during the last minutes of churning or fold into churned ice cream before the final freeze.
