Wash and dry
Rinse all fresh fruit under cool running water and pat dry with a clean kitchen towel or paper towels.

Prep apples and banana
Core and slice the apple into thin wedges or bite-sized pieces to prevent browning; if you prefer, toss the apple slices immediately in half of the lemon juice (about 1/2 tablespoon) to reduce oxidation. Slice the banana just before serving to keep it from turning brown.

Segment orange and ready berries
Peel the orange and separate into segments, removing any large pith. Hull and halve the strawberries if large. If grapes are large, halve them; leave blueberries whole.

Combine fruit
Place all prepared fruit in a large mixing bowl and gently toss to combine, taking care not to mash softer fruit like banana or strawberries.

Mix dressing
In a small bowl, whisk together the honey, remaining lemon juice (about 1/2 tablespoon if you used some on the apples), and chopped mint until smooth and slightly emulsified.

Add nuts and serve
Sprinkle the toasted chopped nuts over the dressed fruit just before serving to preserve their crunch. Serve immediately, or chill in the refrigerator for up to 1 hour for a cooler salad.
