    Warm milk and cream

    In a medium saucepan, combine 1 cup whole milk, 1 cup heavy cream and 1/2 cup granulated sugar. Split a vanilla bean lengthwise and scrape the seeds into the pan (or add 1 tablespoon vanilla extract). Warm over medium heat until the mixture is hot and sugar dissolves but not boiling — small bubbles will form around the edges (about 5–7 minutes).

    Temper yolks

    Whisk 3 egg yolks in a bowl until smooth. Slowly pour about 1/3 of the hot milk mixture into the yolks in a thin stream, whisking constantly to temper the yolks and prevent curdling.

    Cook custard

    Pour the tempered yolk mixture back into the saucepan with the remaining milk mixture. Cook gently over medium-low heat, stirring constantly with a wooden spoon or heatproof spatula, scraping the bottom, until the custard thickens enough to coat the back of the spoon (170–175°F / 77–80°C) — about 4–6 minutes. Do not boil.

    Finish and chill

    Remove from heat, stir in 1/4 teaspoon fine salt. If you used a vanilla bean, remove the pod. Pour the custard through a fine-mesh sieve into a clean bowl to remove any curdled bits. Cool to room temperature, then cover and chill in the refrigerator at least 4 hours or overnight until thoroughly cold.

Chocolate Swirl

    While the custard chills (or during the final 30 minutes before churning), make the chocolate swirl. Chop 3 oz bittersweet chocolate and place in a heatproof bowl. Microwave in 20-second bursts, stirring between bursts, until melted, or melt over a double boiler. Stir in 1 teaspoon unsalted butter and 1 teaspoon light corn syrup (if using) until smooth. Let cool to slightly warm but still pourable — thick but ribboning.

Crunchy Mix-in

    Toast 1/2 cup chopped almonds in a dry skillet over medium heat, stirring, until fragrant and lightly browned (3–5 minutes). Let cool. Chop or break 1/4 cup caramel or toffee pieces into small bits. Combine and set aside in an airtight container until needed.

Churning and Assembly

    Churn ice cream

    Pour chilled custard into your ice cream maker and churn according to manufacturer’s instructions until it reaches a soft-serve consistency (usually 20–30 minutes).

    Layer with chocolate and mix-ins

    Transfer one-third of the churned ice cream into a loaf pan or storage container. Spoon a few tablespoons of the cooled chocolate swirl over it, then sprinkle a portion of the crunchy mix-in. Add another third of ice cream, repeat with more chocolate and mix-ins, then finish with the remaining ice cream. Use a spatula or butter knife to gently ripple the layers (do not overmix — keep visible chocolate ribbons). If chocolate has thickened too much, warm it briefly to loosen before spooning.

    Harden

    Cover the container with plastic wrap or an airtight lid and freeze for at least 4 hours to firm up to scoopable consistency.

Serve

    When ready to serve, let the ice cream sit at room temperature 3–5 minutes to soften slightly. Use a warmed ice cream scoop to make two generous scoops (the 'double scoop') into bowls or cones. Finish with a light dusting of chocolate shavings or 1 teaspoon cocoa powder and a pinch (1/4 teaspoon) of flake salt or sprinkles if desired.
